INGREDIENTS:

  • 1 litre of full-fat milk
  • 2 tablespoons lemon juice or white vinegar
  • 1/4 cup sugar

Sugar syrup:

  • 4 cups water
  • 1 cup sugar
  • 2-3 cardamom pods, crushed
  • A few saffron strands (optional)

Flavored milk:

  • 4 cups full-fat milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • A few saffron strands (optional)
  • Chopped nuts for garnish (pistachios, almonds, cashews))

Preparation Method

Step 1 (Rasmalai)

Prepare the paneer balls:

  • Heat the milk in a heavy-bottomed pan until it comes to a boil. Slowly add the lemon juice or vinegar while stirring continuously until the milk curdles and separates into curds (paneer) and whey.
  • Strain the curds using a muslin cloth or cheesecloth. Rinse it under cold water to remove any trace of lemon or vinegar. Gather the cloth edges and squeeze out excess water. Hang it for about 30 minutes to drain any remaining water.
  • Transfer the paneer to a plate and knead it well until it becomes smooth and soft.
    Equally divide the paneer into small sized balls and need to flatten them.

Preparing the sugar syrup:

  • In a wide pan, bring the water to a boil. Add the sugar, crushed cardamom pods, and saffron strands (if using). Stir until the sugar dissolves completely.
  • Need to drop the paneer balls gently into the syrup. Cover and cook for about 15-20 minutes on low heat until the paneer balls double in size and become spongy. Turn off the heat and let them cool down in the syrup.

Prepare the flavored milk:

  • In another wide pan, heat the milk. Add sugar, cardamom powder, and saffron strands. Let it simmer on low heat until it reduces slightly and thickens and mix it well.

Assemble:

  • Gently squeeze out the paneer balls from the sugar syrup and place them in the flavored milk. Let them soak for at least 1-2 hours in the refrigerator to absorb the flavors.
  • Garnish with chopped nuts before serving. Enjoy your homemade Rasmalai chilled as a delightful dessert!
