INGREDIENTS:

  • 1 cup basmati rice
  • 2 cups mixed vegetables (carrots, peas, beans, potatoes), chopped
  • 1 large onion, thinly sliced
  • 2 medium-sized tomatoes, chopped
  • 2 green chillies, slit
  • 1/4 cup peanuts
  • 1/4 cup oil or ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1-inch cinnamon stick
  • 2-3 cloves
  • 2-3 cardamom pods
  • 1 bay leaf
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon tamarind paste
  • A handful of fresh coriander leaves, chopped
  • A few curry leaves
  • Salt to taste
  • 2 cups water

Preparation Method

Step 1 (Andhra Style Veg Pulao)

Wash the basmati rice in water clean and clearly. Soak the rice in water for about 30 minutes, and then drain. Take a pan and add oil or ghee and heat it by keeping the flame on medium heat.

Tempering:
Add 1 teaspoon of mustard seeds and add 1 teaspoon of cumin seeds to the hot oil. Let them splutter. Add cinnamon, cloves, cardamom, bay leaf, and asafoetida. Saute for a few more seconds till they release their aroma.

Saute Aromatics:
Add sliced onions and green chillies. Saute till the onions turns golden brown colour.
And add 1 tablespoon ginger-garlic paste and saute for few minutes till the raw smell disappears.

Adding Vegetables:
Add the mixed vegetables and cook for 3-4 minutes, stirring occasionally. And add 2 chopped tomatoes and cook till they become soft.

Spices and Tamarind:
Mix in turmeric powder, tamarind paste, and salt. Cook for an additional 2 minutes.

Step 2 

Rice and Water:
Take a pan and add the soaked the drained basmati rice and Stir gently to coat the rice with the vegetable mixture. Pour in 2 cups of water and bring it to a boil.

Cooking:
After the water comes to a boil by keeping the flame on low. Cover the pan with a tight-fitting lid and simmer for about 15-20 minutes or until the rice is cooked and the water is absorbed.

Fluff and Garnish:
After it cooked, fluff the rice gently with a fork. Add chopped coriander leaves and curry leaves. Optionally, you can also sprinkle roasted peanuts for added crunch.
