Step 1 (Rangoon Puttu)

Prepare the puttu mixture:

In a mixing bowl, combine the rice flour, grated coconut, jaggery, cardamom powder (if using), and a pinch of salt and mix it well.

Moisten the mixture:

Slowly add water to the mixture, a little at a time, and mix until the mixture becomes slightly moist and crumbly. Be careful not to add too much water; the mixture should hold its shape when pressed together but should not be too wet.

Steam the puttu:

Fill the bottom chamber of a puttu maker (or puttu kutti) with water and bring it to a boil. Meanwhile, prepare the puttu maker by adding a layer of grated coconut at the bottom followed by the prepared puttu mixture. Need to repeat this process till the puttu maker is filled, need to keep the grated coconut layer on the top.

Steam:

Once the water in the bottom chamber is boiling, place the filled puttu maker on top of it and steam for about 10-15 minutes, or until the puttu is cooked through. You’ll notice steam coming out from the top holes of the puttu maker when it’s done.

Serve:

Carefully remove the puttu from the puttu maker and serve it warm. It can be enjoyed on its own or paired with banana slices, chickpea curry, or a dollop of ghee. Enjoy your homemade Rangoon Puttu!
