INGREDIENTS:

For Marination:

  • 500g chicken, cut into pieces
  • 1/2 cup yogurt
  • 1 teaspoon turmeric powder
  • Salt to taste

For the Kurma:

  • 2 tablespoons oil or ghee
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 cup grated coconut or 1/2 cup coconut milk
  • 2 green chillies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • Salt to taste
  • 1/2 cup water
  • 10-12 cashews (optional, for a creamier texture)
  • Fresh coriander leaves for garnish
  • 1/2 teaspoon garam masala

Step 1 (Chicken Kurma)

Marination:
In a bowl, combine chicken pieces, yogurt, turmeric powder, and salt. Mix well, ensuring the chicken is coated. Need to marinate for about 20 to 30 minutes.

Preparing the Kurma:
Take a pan and add oil or ghee and heat it by keeping the flame on medium. Add 1 large chopped onions and saute till golden brown colour. Add ginger-garlic paste and green chillies. Saute it for few minutes.

Add chopped tomatoes and cook until they become soft and the oil starts separating from the masala. Add coriander powder, cumin powder, turmeric powder, and red chilli powder and mix it well and cook it for few minutes.

If using cashews, blend them with a little water to form a smooth paste. Add this paste to the masala and mix well. Add the marinated chicken to the masala. Cook for 5-7 minutes, allowing the chicken to brown.

Add grated coconut or coconut milk to the pan. Mix it everything well and continue cooking for another few minutes. Pour in water, add salt to taste, and stir. Cover the pan and let the chicken cook on low-medium heat until it becomes tender.

This may take around 20-25 minutes. Once the chicken is cooked, sprinkle garam masala and garnish with fresh coriander leaves. Serve the Chicken Kurma hot with steamed rice, biryani, chapati, naan, or any bread of your choice.
