INGREDIENTS:

  • 1 medium-sized cauliflower, cut into florets
  • 1 large onion, finely chopped
  • 2 medium-sized tomatoes, finely chopped
  • 2 green chillies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup yogurt
  • 1/2 cup fresh coriander leaves, chopped (for garnish)
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • Salt to taste

Spice Mix:

  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Red chilli powder – 1/2 teaspoon
  • 1/2 teaspoon garam masala

Preparation Method

Step 1 (Gobi Masala)

Blanch Cauliflower:
Take a kadai and water and boil it and add a pinch of salt. Add cauliflower florets and blanch for 2-3 minutes. Drain and set aside.

Marinate Cauliflower:
In a bowl, mix yogurt, half of the ginger-garlic paste, turmeric powder, cumin powder, coriander powder, red chilli powder, and salt. Add cauliflower florets, ensuring they are well coated. Need to marinate for about 20 to 30 minutes.

Cooking:
Take a pan and add oil and heat it by keeping the flame on medium. Add cumin seeds and let them splutter. Then add 1 large chopped onion and saute till it reaches golden brown colour. Add the remaining ginger-garlic paste and green chillies.

Saute for few minutes till the raw smell disappears. Add 2 medium-sized chopped tomatoes and continue cooking till they become soft and the oil separates.

Step 2 

Spices:
Add the remaining turmeric powder, cumin powder, coriander powder, red chilli powder, and garam masala. And mix it well and continue cooking for few minutes.

Cooking Cauliflower:
Add the marinated cauliflower along with the marinade to the pan. Mix well, cover the pan, and let it cook on low-medium heat until the cauliflower is tender. Stir occasionally to prevent sticking.

Garnish:
After the cauliflower is cooked, garnish them with fresh finely chopped coriander leaves.

Serve:
