  • 500g chicken, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 1/4 cup grated coconut
  • 1/4 cup oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 tablespoon garam masala
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chillies, chopped
  • Salt to taste
  • Fresh coriander leaves for garnish

Step 1 (Maharashtrian Chicken Curry)

  • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter. Then add 2 chopped onions and saute it till they become golden brown colour.
  • Add ginger-garlic paste and green chillies. Sauté for few minutes till the raw smell disappears. Add 2 chopped tomatoes and continue cooking till they become soft and the oil starts to separate.
  • Then add 1/2 teaspoon of turmeric powder and add 1 tablespoon of red chilli powder and then add 1 tablespoon of coriander powder and add 1 tablespoon of garam masala. Mix well and cook for 2-3 minutes.
  • Add grated coconut and continue cooking for another 2-3 minutes. Add the chicken pieces and mix them well with the masala. Continue Cooking for about 5 minutes, allowing the chicken to brown slightly.
  • Add salt as per your taste and add water as per your need to cover the chicken by keeping the flame on medium to low. Cover and cook until the chicken is tender and the curry reaches your desired consistency.
  • Garnish with fresh coriander leaves. Serve the Maharashtrian Chicken Curry hot with steamed rice or Indian bread like chapatti or naan.
