INGREDIENTS:

  • 1 cup besan (gram flour)
  • 1 cup ghee (clarified butter)
  • 1 cup sugar
  • 2 cups water
  • 1/2 teaspoon cardamom powder
  • A handful of chopped nuts (almonds, cashews, pistachios) for garnishing

Preparation Method

Step 1 (Besan Halwa)

Roasting Besan:

  • Heat a heavy-bottomed pan or kadai on medium heat. Add besan (gram flour) and roast it on low to medium flame. Keep stirring continuously to avoid lumps and ensure even roasting.
  • Roast until it turns golden brown and you can smell a nutty aroma. This might take around 10-15 minutes.

Preparing Sugar Syrup:

  • In a separate pan, heat water and add sugar to it. Stir continuously to dissolve the sugar completely, and let it come to a boil to form a syrup. No need for any specific consistency; just ensure the sugar is completely dissolved.

Combining Besan and Sugar Syrup:

  • Once the besan is roasted and you have the sugar syrup ready, slowly add the sugar syrup to the roasted besan. Be cautious as it might splutter.

Cooking:

  • Keep stirring the mixture continuously to avoid any lumps. Add ghee gradually while stirring and mix it well till it becomes thick. This might take around 10-15 minutes.

Step 2 

Adding Cardamom Powder:

  • Once the mixture reaches the desired consistency and the ghee starts separating, add cardamom powder for flavor. Mix well.

Garnishing:

  • Add chopped nuts and mix them into the halwa.
