INGREDIENTS:

  • Chicken – 500 grams (cleaned and cut into pieces)
  • 1 cup fresh mint leaves (pudina), washed and chopped
  • 1 large onion, finely sliced
  • 2 tomatoes, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup yogurt
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • Red chilli powder – 1 teaspoon
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Step 1 (Pudina Chicken Curry)

Marination:
In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chilli powder, and salt. Marinate the chicken for 20 to 30 minutes.

Cooking the Chicken:
Heat oil or ghee in a pan over medium heat. Add 1 teaspoon of cumin seeds. Then add the finely sliced onions and saute it till reaches golden brown colour. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

Adding Chicken:
Add the marinated chicken to the pan and cook until the chicken is browned on all sides.
Stir in the coriander powder and cook for a couple of minutes.

Adding Mint (Pudina):
Add the chopped mint leaves to the chicken. Mix well and cook for another 5-7 minutes until the mint leaves release their aroma.
