INGREDIENTS:

  • 250g ivy gourd (tindora), washed and sliced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chillies, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • Red chilli powder – 1 teaspoon
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Curry leaves
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Preparation Method

Step 1 (Ivy Gourd Curry)

  • Take 250 gram ivy gourd and wash it cleanly and then trim the both end. Slice them into thin, round pieces.
  • Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, and asafoetida. Allow them to splutter. Add chopped onions and sauté until they become golden brown.
  • Add ginger-garlic paste and green chillies then saute for few minute and add chopped tomatoes and continue cooking for few more minutes.
  • Then add ½ teaspoon of turmeric powder and add 1 teaspoon of red chilli powder and then add 1 teaspoon of coriander powder and add ½ teaspoon of cumin powder
  • And check for seasoning by adding salt as per your taste and mix it well and continue cooking few more minutes.

Step 2 (Ivy Gourd Curry)

  • Add the sliced ivy gourd and curry leaves. Mix everything well, ensuring the ivy gourd is coated with the spice mixture.
  • Then pan need to be covered by keeping the flame on low heat. Stir occasionally to prevent sticking.
  • Cook until the ivy gourd is tender but not mushy. This may take around 15-20 minutes.
  • Need to garnish with fresh finely chopped coriander leaves and serve it hot with rice or roti.
