INGREDIENTS:

  • 1 cup tender coconut water
  • 1 cup tender coconut flesh, finely chopped
  • 1 cup thin coconut milk
  • 1 cup thick coconut milk
  • 1/2 cup basmati rice
  • 1/2 cup jaggery, grated or chopped
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup cashews and raisins (for garnishing)
  • 1/2 teaspoon cardamom powder
  • A pinch of salt

Preparation Method

Step 1 (Tender Coconut Payasam)

Prepare Rice:
Wash basmati rice thoroughly. In a pressure cooker, cook the rice with thin coconut milk until it becomes soft and mushy.

Prepare Jaggery Syrup:
Take a pan and add ½ cup of jaggery and melt it by adding water to make a syrup. Strain to remove impurities if needed.

Combine Rice and Jaggery Syrup:
Then add the cooked basmati rice to the jaggery syrup and mix it well. Cook for a few more minutes until the rice absorbs the jaggery flavor.

Add Coconut Water and Flesh:
Pour in the tender coconut water and add the chopped tender coconut flesh to the mixture. Add a pinch of salt and mix it well and continue cooking for few more minutes by keeping the flame on low.


Add Thick Coconut Milk:
Add the thick coconut milk and cardamom powder. Stir continuously to avoid curdling. Let it simmer for another 5-7 minutes until the payasam thickens.
