INGREDIENTS:

  • 4-5 slices of bread (white or whole wheat)
  • Basmati rice – 1 cup (washed and soaked for 30 minutes)
  • 1 onion, thinly sliced
  • 1 tomato, chopped
  • Mixed vegetables – 1/2 cup
  • 1/2 tsp cumin seeds
  • 1/2 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • Red chilli powder – 1/2 tsp
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 2 tbsp cooking oil
  • Fresh coriander leaves for garnish
  • Water for cooking rice

  • Cut the bread slices into bite-sized pieces. Rinse the rice thoroughly and soak it in water for 30 minutes. Drain the water before using.
  • Take a pan adds water and boil it. Add a pinch of salt. Cook the rice until its 70-80% cooked (it should still have a slight bite). This usually takes about 6-8 minutes.
    Drain the rice and set it aside.
  • In a pan and add 2 tbsp cooking oil by keeping flame on medium.
  • Then add the 1/2 tsp of cumin seeds and add the sliced onions and saute it until it becomes golden brown colour.

  • Add the ginger-garlic paste and sauté for a minute or until the raw smell disappears.
  • And add 1 tomato, chopped and cook until they become soft and add 1/2 tsp turmeric powder and then add Red chilli powder – 1/2 tsp and add 1/2 tsp garam masala powder and Mix it well and add Vegetables and Bread.
  • Now, add the bread pieces to the pan and gently mix everything together. Cook for another 2-3 minutes.

  • Carefully add the partially cooked rice to the pan. Gently mix everything to combine.
    Cover the pan with a lid and let it cook on low heat for 5-7 minutes.
