  • 1/2 teaspoon black peppercorns
  • 4-5 dried red chillies (adjust to taste)
  • 4-5 cloves
  • 2-3 green cardamom pods
  • 1-inch cinnamon stick
  • 1/2 teaspoon turmeric powder)

  • Dry roast all the ingredients for the Chettinad spice mix in a pan over medium heat until fragrant. Be careful not to burn them. Let them cool and then grind into a fine powder using a spice grinder or mortar and pestle.
  • Take a pan and add oil and heat it and add chopped onions and continue frying until it turns golden brown. Add the green chillies, ginger-garlic paste, and curry leaves.
  • Then add the chopped tomatoes and continue cooking until becomes soft.
