  • 2 ripe bananas, mashed
  • 1 cup rice flour

  • A pinch of salt
  • A pinch of baking soda (optional)
  • 1/2 cup milk (approx.)
  • Ghee or oil for cooking

Step 1 (Banana Paniyaram)

  • In a mixing bowl, combine the mashed bananas and jaggery or sugar. Mix well until the jaggery/sugar is dissolved.
  • Add the rice flour, cardamom powder, salt, and baking soda (if using) to the banana mixture. Mix to form a thick batter.
  • Gradually add milk and mix well to make a smooth batter. The consistency should be thicker than regular dosa batter but not too thick.
  • Heat the paniyaram pan and add a few drops of ghee or oil in each mold.
    Once the ghee/oil is hot, spoon the batter into each mold, filling them up to 3/4 full.
  • Cover the pan with a lid and cook on medium-low heat for a few minutes until the bottom side of the paniyaram turns golden brown.

Step 2 (Banana Paniyaram)

  • Carefully flip each paniyaram using a skewer or spoon, and cook the other side until golden brown as well. Add more ghee/oil if needed.
  • Once both sides are cooked and have a crispy texture, remove the paniyaram from the pan and place them on a plate lined with paper towels to absorb excess oil.
  • Repeat the process with the remaining batter, adding more ghee/oil to the molds as needed.
  • Serve the Banana Paniyaram hot as a sweet snack or breakfast dish. It can be enjoyed on its own or with a drizzle of honey or maple syrup.
