  • Garlic cloves: 2 to 3, minced
  • Ginger: 1 teaspoon, minced or grated
  • Scallions (green onions): 2 to 3, chopped
  • Soy sauce: 2 to 3 tablespoons
  • Sesame oil: 1 teaspoon
  • Vegetable oil: 2 to 3 tablespoons
  • Salt and pepper to taste
  • Optional additions: tofu, scrambled eggs, chopped nuts, sesame seeds

  • Heat a large pan or wok over medium-high heat and add 1 to 2 tablespoons of vegetable oil.
  • Then add 2 to 3 garlic cloves and then add 1 teaspoon of ginger in the hot oil and stir-fry for about 30 seconds until fragrant.
  • Add the chopped vegetables and stir-fry for a few minutes until they start to soften but are still slightly crunchy.
  • You can add them in order of cooking time, starting with harder vegetables like carrots and broccoli, and finishing with softer ones like peas and bell peppers.

 

  • If you’re adding tofu or scrambled eggs, you can scramble them in this empty space until they’re cooked through. Push them to the side with the vegetables.
  • Add the cooked rice to the pan and break up any clumps with a spatula. Mix the rice with the vegetables and protein.
  • Then add 2 to 3 tablespoons of soy sauce and add 1 teaspoon of sesame oil with the rice and vegetables and mix everything together.
  • Continue stir-frying for a few more minutes, allowing the rice to heat through and absorb the flavors. You can let it sit for a moment between stirrings to allow the rice to get a little crispy.

Step 2

  • Add the chopped scallions and any optional chopped nuts or sesame seeds if desired.
    Season with salt and pepper to taste and give it a final stir.
  • Once everything is well mixed and heated through, remove the pan from heat.
