INGREDIENTS:

  • Dried Chickpeas – 1 cup
  • Water – For soaking
  • Large Onion – 1 No (finely chopped)
  • Large Tomatoes – 2 No’s  (finely chopped)
  • Garlic cloves – 3 No’s   
  • Ginger – Piece of 1-inch (grated)
  • Green chillies – 1 No (Finely chopped)
  • Cumin Seeds – 1 Teaspoon
  • Coriander Powder – 1 Teaspoon
  • Turmeric Powder – 1/2 Teaspoon
  • Garam Masala – 1 Teaspoon
  • Cumin Powder – 1 Teaspoon
  • Red chilli powder – 1 Teaspoon
  • Dried Mango Powder – 1 Teaspoon
  • Salt – To Taste
  • Oil – For Cooking
  • Paneer – 250 gram (cut into cubes
  • Fresh Coriander Leaves (chopped – Garnish)
  • Lemon wedges.

Preparation Method

Step 1 (Chole Paneer Curry)

  • If using dried chickpeas, soak them in water overnight or for at least 6 hours. Drain and rinse the soaked chickpeas before cooking.
  • In a large pot, cook the soaked and drained chickpeas with fresh water until they are tender and cooked through. If using canned chickpeas, skip this step and directly move to the next.
  • In a separate pan, heat some oil and sauté the cumin seeds until they sizzle and release their aroma.
  • Add the finely chopped onions, minced garlic, grated ginger, and green chillies to the pan. Continue fry till the onion reached golden brown colour.
  • Now, add the coriander powder, turmeric powder, cumin powder, red chilli powder, and salt and mix it well.

Step 2 (Chole Paneer Curry)

  • Add the cooked chickpeas to the Masala and mix them together, ensuring the chickpeas are coated with the spice mixture by keeping flame on low.
  • Add the paneer cubes to the chickpea mixture and gently stir to combine. Sprinkle garam Masala and amchur (or chat Masala) over the curry. Check for seasoning by adding salt and spices as per your need.
  • Simmer the curry for a few more minutes, allowing the flavours to meld together. If the curry looks too thick, you can add some water to achieve the desired consistency.
  • Once the Chole Paneer Curry is ready, garnish it with chopped fresh coriander leaves and serve it hot with Roti, Naan, rice, or any Indian bread of your choice.
  • You can also serve it with some lemon wedges on the side for an extra tangy kick.
