INGREDIENTS:

For Carrot Malpua:

  • Carrot – 3 No’s (Medium Size)
  • Sugar – 2 Tablespoon
  • Milk – 2 Cup
  • Rava – ½ Cup
  • Wheat Flour – 1 Cup
  • Cardamom Powder – ¼ Teaspoon
  • Baking Powder – ½ Teaspoon
  • Saffron – 1 Pinch
  • Ghee – 2 Teaspoon (for frying)
  • Oil – As per your need (for frying)
  • Chopped Nuts – Few (for garnish)

For Sugar Syrup:

  • Sugar – 1 Cup
  • Water – 1 Cup
  • Cardamom – 3 Pods
  • Saffron – 1 Pinch

Preparation Method:

Today’s recipe is a Carrot Malpua Recipe, so let’s get started.

Step 1 (Carrot Malpua Recipe)

  • Take 3 medium size carrot and peel off the skin wash it and cut it into small pieces and keep it a side.
  • Take a blender and add the carrot pieces and then 2 tablespoon of sugar and add 1 cup of milk and blend it to get smooth puree and then transfer it to a bowl.
  • Then add 1 pinch of saffron and add ½ teaspoon of baking powder and then add ½ cup of Rava and add 1 cup of wheat flour.
  • And then add ¼ Teaspoon of Cardamom Powder and add 1 cup of milk.
  • Mix it well until everything is combined well and add milk as per your need and mix it well using whisk until batter reaches lump free and keep it side.

Step 2 (Carrot Malpua Recipe)

  • Take a pan and add 1 Cup of Sugar and then add 1 Cup of Water and add 3 Pods of Cardamom and stir it well until the sugar melts completely.
  • Continue boiling it for about 5 to 10 minutes until sugar syrup turns thick and sticky consistency by keeping the flame on low and then add 1 Pinch of Saffron.
  • And mix it well for few minutes and turn off the stove and keep it a side.

Step 3 (Carrot Malpua Recipe)

  • Take a kadai and add 2 teaspoon of ghee and then add oil and heat it and take 1 tablespoon of batter and pour it in a ladle over hot oil.
  • And fry it by keeping the flame on low and turn over and fry the other side until malpua cooked completely.
  • Then move the cooked malpua to the tissue paper to remove excess oil from it.
  • Dip and soak the carrot malpua in the sugar syrup for few minutes and then move it to the serving plate and garnish with chopped nuts.
