INGREDIENTS:

LARGE POTATO – 4 NOS.

SALT

SOFTENED BUTTER – 1 TBSP

FINELY CHOPPED ONION – 1 NO.

FINELY CHOPPED GREEN CHILLI – 1 NO.

CHOPPED CORIANDER LEAVES

SALT – 1/4 TSP

FRESHLY CRUSHED PEPPER

HOT WATER – 3 TBSP

GRATED CHEESE

BUTTER – 1 TBSP

Preparation Method

Step 1 (Cheesy Stuffed Potato)

Today’s recipe is a lovely and delicious veg starter that is Cheesy Stuffed Potato and so let’s gets started.

We all love potatoes and we are always looking to make new and different dishes and recipes with potatoes. Today I am going to show you a very nice recipe this is cheesy stuffed potatoes.

Step 2 (Cheesy Stuffed Potato)

For the potato salad first I am going to boil the potatoes, for that take a nice sauce pan add enough water for boiling. Reason you don’t want to pressure cook is it can get very mushy.

For this recipe I am using four large potatoes with skin, so just boil the potatoes in a saucepan. Once the water comes to a boil add a little salt, the potatoes have been boiling for about 20 minutes.

Step 3 (Cheesy Stuffed Potato)

So you can see if you prick a folk through the potato it is nice and soft. So turn off the stove remove the potatoes from the water cut the potatoes into half vertically.

Cooked perfectly now we are just going to scoop off from the center, make sure you have a thick wall if it’s too thin it can just fall apart. So just leave a little room for the wall I can just gently scoop it out from the Center.

Step 4 (Cheesy Stuffed Potato)

So you can see it scooped up the center from the boiled potatoes and there’s a little wall here that I have left, so when I stuff the potatoes it won’t fall apart or come out. Place the scoop potatoes into a bowl.

So I am going to use these potatoes for the stuffing, I am going to match the potato a bit. To this I am going to add one tablespoon of softened butter, add one small onion finely chopped, add 1 green chili finely chopped and add few chopped coriander leaves.

Step 5 (Cheesy Stuffed Potato)

For seasoning add quarter teaspoon salt (you can adjust the salt according to taste), add freshly crushed pepper, add 1/2 teaspoon chili flakes and mix everything together. So you can see the filling has come together beautifully.

If you like the potato mash a little more gooey and soft you can just add a little milk or just a little hot water to get the right consistency. So I am going to add three tablespoons of hot water the filling is done.

Step 6 

I am going to scoop a little bit of the filling and place it into the potato shells, just grated some cheese on the top. Take a pan add one tablespoon of butter (for this you can either use butter or oil), just make sure the butter coats the pan completely.

So once it’s melted reduce the flame and just place the stuffed potatoes into the pan, just going to sprinkle a few chili flakes. Need to close the pan, keep the flame on medium and cook the potatoes till the cheese melts.

Step 7 

The potatoes are done turn off the stove, you can see the cheese has melted beautifully it looks absolutely gorgeous the cheesy stuffed potatoes are done. Serve it nice and hot.
