  • 1 teaspoon cumin seeds
  • 2-3 green cardamom pods
  • 1 black cardamom pod
  • 1-inch cinnamon stick
  • 4-5 cloves
  • 1 teaspoon fennel seeds
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chilli powder
  • 1 teaspoon ground fennel (saunf) powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Step 1 (Kashmiri Dum Aloo)

Prepare the Potatoes:
Peel and parboil the baby potatoes until they are just cooked but still firm. Prick the potatoes with a fork to allow the flavors to penetrate.

Fry the Potatoes:
Heat oil in a pan and deep fry or shallow fry the parboiled potatoes until they turn golden brown. Set them aside.

Prepare the Gravy:
Take a pan and remove the excess oil and leaving for about 2 tablespoons. Add cumin seeds, green cardamom, black cardamom, cinnamon, cloves, and fennel seeds. Sauté until they release their aroma.


Then add 1 large chopped onion and continue cooking till it reaches golden brown colour.
Add 1 teaspoon of ginger-garlic paste and saute it for a few minutes. Stir in tomato puree and cook until the oil separates.

Spice it Up:
Lower the heat and add turmeric powder, Kashmiri red chilli powder, ground fennel powder, and salt. Cook the spices for a few minutes.

Yogurt Mixture:
Whisk the yogurt well and gradually add it to the spice mixture, stirring continuously to avoid curdling. Cook the yogurt mixture until the oil starts to separate.

Add Potatoes:
Gently add the fried potatoes to the gravy, coating them evenly with the sauce.
