INGREDIENTS:

  • 1 cup minced chicken or vegetables (cabbage, carrot, and paneer work well)
  • 1 small onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 green chilli, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oil
  • Salt and pepper to taste


Momo Dough:

  • 1 cup all-purpose flour
  • Water (as needed)
  • Salt to taste

Tandoori Marinade:

  • 1/2 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon red chilli powder
  • 1 tablespoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste

Step 1 (Tandoori Momos)

  • In a pan, heat oil and sauté onions until translucent. Add ginger-garlic paste, green chilli, and minced chicken or vegetables. Continue Cooking till the meat is cooked through or the vegetables are tender. Stir in soy sauce, salt, and pepper. Allow the mixture to cool.

Make the Momo Dough:

  • Mix all-purpose flour, salt, and enough water to form a smooth dough. Rest the dough for 30 minutes. Divide the dough into small portions and roll each portion into a thin, round disc.

Fill and Shape the Momos:

  • Need to place the filling in the centre of each disc by using the spoon. Fold the disc in half, sealing the edges to form a crescent shape. You can use different folding techniques if desired.

Prepare the Tandoori Marinade:

  • In a bowl, mix yogurt, ginger-garlic paste, red chilli powder, garam masala, lemon juice, and salt to create the marinade.

Marinate the Momos:

  • Coat the momos with the tandoori marinade, ensuring they are well-covered. Let them marinate for at least 2 hours or overnight for better flavor absorption.

Cook in Tandoor or Oven:

  • Preheat the tandoor or oven to a high temperature. Thread the marinated momos onto skewers and cook for 15-20 minutes or until they are cooked through and have a nice char.
