INGREDIENTS:

  • 1 cup dried red chillies, soaked in warm water

  • 2 tablespoons Sichuan peppercorns
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 2 tablespoons tomato ketchup
  • 2 tablespoons oil
  • Salt, to taste

Step 1 (Schezwan Chutney)

Soak the Red Chillies:
Remove the stems from the dried red chillies and soak them in warm water for about 30 minutes or until they become soft.

Drain the soaked red chillies and blend them into a smooth paste along with garlic, ginger, and Sichuan peppercorns. Add a little water if needed.

Cooking:
Heat oil in a pan or wok. Add the chilli paste and sauté over medium heat for 5-7 minutes until the raw smell disappears.

Sauces:
Add soy sauce, vinegar, and tomato ketchup. Mix well and cook for an additional 5 minutes.

Seasoning:
Adjust salt according to your taste. Keep in mind that soy sauce also contains salt, so be cautious while adding additional salt.

Cool and Store:
After the chutney cool down completely then store it in an airtight container. You can refrigerate it for longer shelf life.
