INGREDIENTS:

  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chillies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves for garnish

Step 1 (Corn Palak Sabji)

  • Take a pan and add oil or ghee and heat it by keeping the flame on medium. Add 1 teaspoon of cumin seeds and let them splutter. Add chopped onions and sauté until they become golden brown.
  • Add ginger-garlic paste and green chillies and Saute for a few more minutes. Then add chopped tomatoes and continue cooking for few minutes.
  • Add 1 teaspoon of turmeric powder and then add 1 teaspoon of red chilli powder and add 1 teaspoon of coriander powder and check for seasoning by adding salt as per your taste. Mix well and cook for a couple of minutes.
  • Add chopped spinach and cook until it wilts and reduces in volume. Add sweet corn kernels and mix well. Cook for another 5-7 minutes until the corn is tender.
  • Sprinkle garam masala and stir to combine. Cook for an additional 2-3 minutes.
    Garnish with fresh coriander leaves. Serve hot with roti, naan, or rice.
