INGREDIENTS:

For the Puri Dough:

  • 2 cups whole wheat flour
  • 1 cup mashed boiled potatoes
  • 1 teaspoon salt
  • Water (as needed)

For the Aloo (Potato) Masala:

  • 3-4 medium-sized potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 1-2 green chillies, finely chopped
  • 1/2 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon garam masala
  • Red chilli powder – 1/2 teaspoon
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Cooking oil

Preparation Method

Step 1 (Aloo Puri)

For the Aloo (Potato) Masala:
Take a pan and add oil and heat it and add 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds. After they splutter, add finely chopped onion and then add green chillies. Saute until the onions become translucent.

Add 1/2 teaspoon of ginger-garlic paste and saute for few minute till the raw smell disappears. Add turmeric powder, red chilli powder, and salt. Mix well.

Add the mashed potatoes and mix everything thoroughly. Continue cooking for about 5 minutes on medium heat. Add garam masala and fresh coriander leaves. Mix well and cook for an additional 2 minutes. Remove from heat and set aside.

For the Puri Dough:
In a large mixing bowl, combine whole wheat flour, mashed boiled potatoes, and salt. Add water gradually and knead the mixture into smooth and firm dough. Let it rest for 15-20 minutes.

Step 2 (Aloo Puri)


Making Aloo Puri:
Heat oil in a deep pan or kadai for frying the puri. Pinch a small portion of the dough, roll it into a ball, and then flatten it with a rolling pin to form a small disc.

Slide the flattened dough disc carefully into the hot oil. Continue fry it until the puri puffs up and turns golden brown. Remove the puri from the oil using a slotted spoon and place it on a paper towel to absorb any excess oil. Repeat the process with the remaining dough.

Serving:
Serve the hot and puffy Aloo Puri with the prepared Aloo Masala. It pairs well with yogurt, pickles, or any chutney of your choice.
