Tomato Kurma is a flavourful South Indian curry made with tomatoes and a blend of spices. Here’s a simple recipe for making Tomato Kurma:

INGREDIENTS:

  • 4 large tomatoes, chopped
  • 1 large onion, finely chopped
  • 1/2 cup grated coconut
  • 1 green chilli, chopped
  • 1-inch piece of ginger, grated
  • 3-4 cloves of garlic, minced
  • 1/4 cup cashews (optional, for added creaminess)
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder
  • A few curry leaves
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Preparation Method

Step 1 (Tomato Kurma)

Prepare the Tomato Base:

In a blender, combine chopped tomatoes, grated coconut, green chilli, ginger, and cashews. Blend it well to make a smooth paste.

Cooking the Kurma:
Heat oil in a pan. Add mustard seeds and cumin seeds. Allow them to splutter. Then add chopped onions and saute till it turns golden brown colour. Then add minced garlic and curry leaves.

Add Spice Powders:
Add 1/4 tsp of turmeric powder and then add 1 tsp of red chilli powder and add 1 tsp of coriander powder and then add 1/2 tsp of garam masala powder.  Sauté the spices for a minute to enhance their flavour.

Add Tomato Paste:
Pour the tomato-coconut paste into the pan. Mix well and cook on medium heat for 8-10 minutes, stirring occasionally, until the raw smell disappears, and the oil starts to separate from the mixture.

Step 2 (Tomato Kurma)

Adjust Consistency:
Then add water to the Kurma as per your need. Bring it to a boil and then reduce the heat to simmer for an additional 5-7 minutes.

Season and Garnish:
Season the kurma with salt according to your taste. Garnish with fresh coriander leaves.

Serve:
Tomato Kurma is now ready to be served. It goes well with rice, chapatti, dosa, idli, or any Indian bread of your choice.
