INGREDIENTS:

For the Chicken Masala:

  • Boneless chicken – 1 cup (cut into small pieces)
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 2 cloves garlic, minced
  • 1/2-inch piece of ginger, minced
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil

For the Omelette:

  • 2-3 large eggs
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh coriander leaves
  • 1-2 tablespoons grated cheese
  • Butter or oil for cooking

Step 1 (Masala Chicken Omelette)

Prepare the Chicken Masala:

  • Heat oil in a pan over medium heat. And add 1/2 teaspoon cumin seeds. Then add chopped onions and saute it becomes golden brown colour.
  • And add ginger and garlic and cook for few minutes and then add the chicken pieces and cook until they turn white on the outside.
  • Add then add the chopped tomatoes and continue cooking for about 5 to 10 minutes.
  • Add ½ teaspoon of turmeric powder and then add ½ teaspoon of red chilli powder and add ½ teaspoon of  garam masala and then check for seasoning by adding salt as per your need.
  •  Mix well and cook for a few more minutes until the chicken is cooked through and the masala is well blended. Set aside.

Step 2 (Masala Chicken Omelette)

Prepare the Omelette:

  • In a bowl, beat the eggs with a pinch of salt and pepper. You can also add chopped coriander leaves and grated cheese for extra flavour.
  • Heat a non-stick skillet over medium-high heat and add a little butter or oil to coat the pan. Then beaten eggs need to be pour into the pan and spread it evenly. Then cook the eggs for few minute.
