INGREDIENTS:

For Boiled Eggs:

  • 4-6 eggs
  • Water for boiling
  • Salt

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • Green chilli – 1 No (slit)
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • Red chilli powder – 1 teaspoon
  • 1 teaspoon black pepper powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Step 1 (Egg Pepper Masala)

Boil the Eggs:
a. Place the eggs in a saucepan and cover them with water.
b. Then add salt as per your taste in the water.
c. Bring the water to a boil, then reduce the heat and simmer for 8-10 minutes for hard-boiled eggs or 4-5 minutes for soft-boiled eggs.
d. Once done, transfer the eggs to a bowl of cold water to stop the cooking process. Peel the boiled eggs and set them aside.

Prepare the Masala:
a. Take a pan and add oil and heat it by keeping the flame on medium.
b. Then add the chopped onion and continue fry it until it become golden brown colour.
c. Stir in the ginger-garlic paste and green chilli, and cook for a couple of minutes until the raw smell disappears.
d. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate.

Step 2 (Egg Pepper Masala)

Add Spices:
a. Add turmeric powder, red chilli powder, black pepper powder, and salt to the tomato-onion mixture. Stir well and cook for a few more minutes until the spices are well incorporated.

Simmer and Add Eggs:
a. Reduce the heat to low and gently place the boiled eggs into the masala.
b. Coat the eggs evenly with the masala sauce and let them simmer for about 5-7 minutes, allowing the flavours to meld together. You can add a little water if the masala is too thick.
