Here’s a basic recipe for making Chettinad Mushroom Biryani:

INGREDIENTS:

For Marinating Mushrooms:

  • Button mushrooms – 250 grams (cleaned and sliced)
  • 1/2 cup thick yogurt (curd)
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

For Biryani:

  • 1 1/2 cups basmati rice
  • 2 tablespoons ghee (clarified butter) or oil
  • 2-3 bay leaves
  • 4-5 cloves
  • 4-5 green cardamom pods
  • 2-3-inch cinnamon stick
  • 1 large onion, thinly sliced
  • 2-3 green chillies, slit
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup tomato, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup fresh coriander leaves, chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon black peppercorns
  • 1 teaspoon Chettinad spice blend (recipe below)
  • Salt to taste
  • 2 1/2 cups water
  • A few saffron strands soaked in warm milk (optional)
  • Ghee for drizzling (optional)

For Chettinad Spice Blend:

  • 1 teaspoon fennel seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon coriander seeds
  • 2 dried red chillies
  • 4-5 cloves
  • 1 small cinnamon stick

2-3 green cardamom pods

Preparation Method

Step 1 (Chettinad Mushroom Biryani)

Marinate the Mushrooms:

  • In a bowl, mix the sliced mushrooms with yogurt, red chilli powder, turmeric powder, and salt. then marinate it for about 20 to 30 minutes.

Prepare the Chettinad Spice Blend:

  • Dry roast all the ingredients for the spice blend in a pan until they become aromatic. Then keep it a side for about 20 to 30 minutes.
  • After it cool down then move to a blender and blend into a fine powder. This is your Chettinad spice blend.

Cook the Rice:

  • Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water.
  • In a large pot, heat ghee or oil and add bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute.
  • Add the drained rice and sauté for 2-3 minutes until the rice is coated with ghee or oil.
    Add 2 1/2 cups of water, salt to taste, and bring it to a boil.
  • Reduce the heat to low, cover the pot, and cook until the rice is 80% cooked. Remove from heat and set aside.

Step 2 (Chettinad Mushroom Biryani)

Prepare the Biryani:

  • In a separate large skillet or pan, heat ghee or oil. Add cumin seeds, fennel seeds, and black peppercorns. Sauté for a minute.
  • Add green chillies and add sliced onions and cook until the it turns golden brown colour.
  • Then add 1 tablespoon ginger-garlic paste and mix it well.
    Add the marinated mushrooms and sauté until they are cooked and slightly browned.
  • And then add 1/2 cup tomato, chopped and continue cooking for few minutes.
    Stir in the Chettinad spice blend and mix well.
    Add the chopped mint and coriander leaves and cook for a couple of minutes.

Assemble and Dum Cook:

  • Layer the partially cooked rice over the mushroom mixture in the pan.
    Drizzle saffron milk over the rice for color and aroma. You can also sprinkle a few mint and coriander leaves.
  • Cover the pan tightly with a lid or foil and cook on low heat for about 20-25 minutes, allowing the flavors to meld together. This is the “dum” cooking method.
