  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chillies, chopped
  • 2 medium-sized tomatoes, chopped
  • 1/2 teaspoon turmeric powder
  • Red chilli powder – 1 teaspoon
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/2 cup yogurt

2 tablespoons chopped fresh coriander leaves

Preparation Method

Step 1 (Brinjal Gravy For Biryani)

  • Start by preparing the brinjals. Wash them and trim the tops. Make a slit at the base of each brinjal, taking care not to cut them into halves. Keep them in a bowl of water with a pinch of salt to prevent browning.
  • Heat 2 tablespoons of oil in a pan. Add turmeric powder and red chilli powder. Stir well.
  • Drain the water from the brinjals and add them to the pan. Fry the brinjals on medium heat until they turn soft and start to brown. Move it from the pan and keep it a side.
  • In the pan add 2 tablespoons oil and then add 1 teaspoon cumin seeds and add 1 large onion, finely chopped. Continue cooking until it becomes golden brown colour.
  • Add ginger-garlic paste and green chillies and mix it well and add 2 medium-sized tomatoes, chopped and continue cooking for few minutes.

Step 2 (Brinjal Gravy For Biryani)

  • Add turmeric powder, red chilli powder, coriander powder, garam masala, and salt. Stir well and cook for a few more minutes until the spices are well roasted.
  • Reduce the heat to low, and slowly add the whisked yogurt while continuously stirring to prevent curdling. Cook for a few minutes until the oil separates again.
  • Add the fried brinjals to the gravy and mix well. Cover the pan and simmer for 10-15 minutes until the brinjals are tender and the gravy thickens.
  • Garnish with chopped fresh coriander leaves.
