How to make Malpua Recipe?

INGREDIENTS:

For Malpua Batter

  • all-purpose flour – 1 cup
  • fennel seeds – 1 teaspoon
  • cardamom powder – ⅓ teaspoon
  • baking soda – ⅛ teaspoon
  • Water – ½ cup
  • milk powder – 3 tablespoons
  • Curd – 3 tablespoons

For Frying Malpua

  • Ghee – 4 tablespoons

For Sugar Syrup

  • Sugar – ½ cup
  • Water – ¼ cup

Preparation Method

Today’s recipe is a simple and Malpua Recipe, so let’s get started.

Step 1 (Malpua Recipe)

Making Malpua Batter

  • Take a bowl and add all-purpose flour then add fennel seeds and add cardamom powder and mix it well.
  • Then add 3 tablespoons of curd and add 3 tablespoons of milk powder.
  • Then add ½ cup of water and start to stir to a medium thick flowing batter without lumps.
  • Cover the bowl and allow the batter to rest for 20 to 30 minutes.
  • Meantime when the batter is resting cut the almonds and pistachios and dip in hot water. Keep them soaked in hot water for about 30 minutes. Then peel and slice them. Keep it side.

Step 2 (Malpua Recipe)

Making Sugar Syrup

  • Take a pan and add ½ cup of sugar and ¼ of cup water and Stir it so that the sugar dissolves. And mix it in low flame.
  • You need to have little bit consistency in the sugar syrup.
  • Need to keep the sugar syrup warm until cooking completes so it doesn’t crystallize.
  • That means you have to keep the sugar syrup pan on a another pan filled with hot water.

Step 3 (Malpua Recipe)

Making Malpua

  • Take a pan and add 4 tablespoons of ghee and heat it.
  • When the ghee is heating up add ⅛ teaspoon of baking soda to the batter.
  • Stir to combine so that the baking soda is mixed evenly with the batter.
  • Keep in the low flame and add 2 to 3 scoop of the batter and gently pour it on the hot ghee.
  • Spread the batter and make 3 to 4 malpua depending on the pan size.
  • Fry on a low flame until one side turns crisp and light golden colour and gently turnover and fry the second side till it turns crisp and light golden.
  • After both the sides turns crispy and light golden colour then gently take them out of the pan and drain them on paper towels for removing the excess oil.

Step 4 (Malpua Recipe)

Coating Malpua with Sugar Syrup

  • After removing the excess oil from Malpua then place them in the warm sugar syrup and gently by using the spoon coat the malpua with the sugar syrup.
  • Then after coating move the malpua to a serving plate and garnish by adding some nuts.
