How to make Vegetable Pulao?

INGREDIENTS:

Ghee – 1 1/2 Tbsp.

Oil – 1/2 Tbsp.

Cinnamon

Clove

Cardamom

Bay Leaf

Onion – 1 No Large Size (Thinly Sliced)

Green Chilli – 2 No’s Slit

Ginger Garlic Paste – 1 Tsp.

Potato – 2 No’s Small size

Carrot – 1 No medium size (Chopped)

Beans – Nicely Chopped

Green Peas – 1/2 Cup

Cauliflower – 1 Cup

Basmati Rice – 1 Cup (Soaking for about 20 Mins)

Salt – 1 Tsp.

Diluted Coconut Milk – 2 Cups

Preparation Method

Step 1 (Vegetable Pulao)

Today we are going make a wonderful simple easy one pot Vegetable Pulao recipe with all the subtle flavors of coconut so why wait let’s get started and check out this quick and easy recipe.

To the pressure cooker add one and half tablespoons of ghee and half tablespoon of oil. Then add the whole spices firstly add cinnamon and add clove, then add cardamom and add bay leaf. Next add one large onion thinly sliced, also add two green chili slit, this is a very easy one pot vegetable Pulao. Once the onions are reach golden brown color then add one teaspoon of ginger-garlic paste and mix it.

Step 2 (Vegetable Pulao)

Now add the entire vegetables one after the other starting with your two small potatoes cut into cubes, add one medium sized carrot chopped, add few beans nicely chopped, add half cup of fresh green peas.

So I am using half cup of each vegetable one cup of cauliflower after adding all the vegetables mix it all in. Saute the vegetables for about 2-3 minutes. Now I am going to season it with one teaspoon of salt.

So I have washed one cup of basmati rice quantity of 250 ml cup and I have soaked it for about 20 minutes. Then I am going to add the rice to the vegetables, gently mix the rice along with the vegetables.

Step 3 (Vegetable Pulao)

Then add two cups of diluted coconut milk. So for one cup of rice I am using two cups of diluted coconut milk adding diluted coconut milk definitely enhances the flavors of the Pulao.

Before closing the pressure cooker check for seasoning and if you need to add salt just add a little bit keep the flame on medium and place the weight. Cook on medium flame and turn off the stove after one whistle.

This vegetable Pulao looks amazing and you can serve it hot with any side dish of your choice. wow the vegetable Pulao looks so colourful and it’s absolutely delicious now i have used coconut milk but you can also use just water to cook the rice and I have also garnished with some nice fried onions and cashew nuts so do try this recipe enjoy and share it with your friends and family.
