How to make Pani Puri?

INGREDIENTS:

For Poori

Rava – 1 cup

Maida – 3 Tbsp.

Salt – To taste

For Pani

Mint leaves – a big hand full

Coriander leaves – A hand full

Ginger – 2 small pieces

Green chillies – 2

Raw mangoes – 4 pieces

Jaggery – little

Tamarind – small gooseberry size

Chat Masala – 1.5 Tsp.

Cumin Powder – 1 Tbsp.

Black salt – 1/2 Tsp.

Lemon – 1/2

For Stuffing

Boiled potatoes – 2

Chilli powder – 1 Tsp.

Roasted Cumin Powder – 1 Tsp.

Chat Masala – 1 Tsp.

Chopped onions – little

Chopped coriander

Salt – To taste

Lemon – 1/2

For final finishing

Date and tamarind chutney

Plain Boondi

Preparation Method

Step 1 (Pani Puri)

Today’s recipe is most delicious and famous chat recipe that is Pani Puri and so let’s gets started.

First we make Puri, For that take a bowl and add 1 cup of Rava and add 3 teaspoon of Maida then add salt as per your need and mix it by adding hot water little by little to make a thick & hard non sticky dough and Allow it to rest for about 10 minutes.

After 10 minutes again mix the dough and add little oil over the dough and allow it to rest for 45 minutes.

Step 2 (Pani Puri)

To make Pani, take a mixer jar and add a big hand full of Mint leaves and add hand full of Coriander leaves then add 2 small piece of Ginger and add 2 Green chillies and add 4 pieces of Raw mangoes then add little Jaggery.

And add small gooseberry size of Tamarind and grind them to a smooth paste by adding water. Then add more water to jar again grind it and pore it to a vessel then add 1.5 teaspoon of Chat Masala and add 1 teaspoon of Cumin Powder.

And add 1/2 teaspoon Black salt and add more water as per your need then check for seasoning by adding salt if needed and squeeze ½ Lemon and mix the Pani well and refrigerate it.

Step 3 (Pani Puri)

To make Stuffing, Mash 2 boiled Potatoes then add 1 teaspoon chilli powder and add 1 teaspoon roasted cumin powder then add 1teaspoon chat masala and add Chopped onions little bit.

And add Chopped coriander then check for seasoning by adding salt as per your need then squeeze ½ Lemon and mix it well.

Begin to roll the dough, don’t roll it too thin or too thick and by using cutter cut into small puri’s. Deep fry the puri in hot oil, wait until it turns golden brown color and turns very crisp. Then you can take the puri out and once cooled down.

Step 4 (Pani Puri)

Keep everything ready before you start assembling the pani puri, First crack the top side of the puri with thumb finger then stuff the potato filling in the puri then add Plain Boondi and add a few teaspoons of sweet chutney or tamarind chutney and dip to puri into the pani and enjoy the tasty Pani Puri.
