INGREDIENTS:

  • 1 cup Poha (flattened rice)

  • 1-2 green chilies, finely chopped

  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 8-10 curry leaves
  • 1/2 teaspoon turmeric powder

  • 2 tablespoons oil

Step 1 (Kanda Poha)

Rinse and Soak Poha:
Take a 1 cup of poha and wash the poha under running water. Soak the rinsed poha in enough water for about 5 minutes or until it softens. Be careful not to soak it for too long, as it can become mushy.

Prepare Ingredients:
Chop the onions, green chilies, and gather the peas and peanuts.

Tempering:
Take a pan and add 2 tablespoons of oil and heat it by keeping flame on medium.
Add mustard seeds and cumin seeds. Allow them to splutter. Add curry leaves and sauté for a few seconds until they release their aroma.

Sauté Onions:
Add chopped onions and green chilies. Sauté until the onions become translucent.

Add Peas and Peanuts:
Add peas and raw peanuts. Cook for a few minutes until the peas are tender and the peanuts turn golden.

Add Turmeric and Salt:
Sprinkle turmeric powder over the mixture. Add salt according to taste. Mix well.

Add Poha:
Once the peas are cooked, add the soaked and drained poha to the pan.

Mix Gently:
Gently mix everything together to ensure the poha is well coated with the turmeric and other flavors.

Cook:
Cover the pan and let it cook on low heat for 3-5 minutes. This allows the flavors to meld, and the poha to heat through.
