INGREDIENTS:

  • 200 grams of paneer (cottage cheese)
  • 1 cup of all-purpose flour (maida)
  • 2 tablespoons of cornflour
  • A pinch of baking soda
  • 1/4 teaspoon of cardamom powder
  • A few saffron strands (optional)
  • Ghee or oil for deep frying

For the Jalebi Batter:

  • 1 cup paneer (grated or crumbled)
  • 1/2 cup all-purpose flour (maida)
  • 2 tablespoons semolina (sooji)
  • 1/4 teaspoon baking powder
  • A pinch of orange food color (optional)
  • 1/4 teaspoon cardamom powder
  • Water – As per your need

For the Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few saffron strands
  • A pinch of cardamom powder

Step 1 (Paneer Jalebi)

  • Start by making the sugar syrup. Take a pan and heat it by keeping the flame on medium and add 1/2 cup water and then add 1 cup of sugar and mix it well. Stir until the sugar dissolves.
  • Then add few saffron strands and add a pinch of cardamom powder to the sugar syrup for giving flavour. Let it simmer for a few minutes until it reaches a one-string consistency.
  • One-string consistency is when you take a drop of syrup between your fingers and it forms a single thread when pulled apart. Keep the syrup warm.
  • In a mixing bowl, combine the grated or crumbled paneer, all-purpose flour, semolina, baking powder, cardamom powder, and orange food color (if using). Mix everything well.
  • Add water gradually to the dry ingredients and mix to form a thick batter.
    Heat ghee or oil in a deep frying pan over medium heat.
  • You can use a jalebi-making cloth or a plastic squeeze bottle with a small hole for shaping the jalebi. Alternatively, you can use a piping bag with a star-shaped nozzle.

Step 2 (Paneer Jalebi)

  • Squeeze the batter into the hot oil in a circular motion to form jalebi shapes. Make them small or medium-sized as per your preference.
  • Fry the jalebi until they are golden brown and crisp. Make sure that they are cooked perfectly on the both sides.
  • Remove the fried jalebi from the oil and immediately dunk them into the warm sugar syrup. Allow them to soak for a few minutes.
  • Gently take out the jalebi from the sugar syrup, letting any excess syrup drip off.
