  • Start by heating the vegetable oil in a Pan keeping the flame on medium heat. Then add the beaten eggs to the pan until it cooked completely and keep it a side.
  • In the same pan, add a bit more oil if needed, and then add the diced onions and minced garlic. Continue cooking until become golden brown colour.
  • Add the diced bell peppers and the frozen peas and carrots and continue cooking for few minutes.
  • Add the diced chicken, shrimp, or tofu and cook until they are heated through and start to turn golden.
  • Sprinkle the curry powder and turmeric over the ingredients and stir to coat them evenly.
  • Then add the cooked rice to the pan and continue fry it everything together. Make sure the rice is well-mixed with the other ingredients.

Step 2 (Singapore Fried Rice)

  • In a small bowl, mix together the soy sauce, oyster sauce (if using), chilli sauce, and sugar to create the sauce. Pour this sauce over the rice and continue to stir-fry.
