INGREDIENTS:

For the Egg Curry:

  • Boiled eggs – 6 No’s (peeled and cut in half)
  • 2 tablespoons oil
  • 2 onions, finely sliced
  • 1 tomato, chopped
  • 1/4 cup yogurt (curd)
  • 1/4 cup coconut milk
  • Cashew Nuts – 1/4 cup (soaked in water for 20 to 30 minutes)
  • 1 teaspoon ginger-garlic paste
    Red chilli powder – 1 teaspoon
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • Chopped coriander leaves for garnish
  • Water as needed


For the Spice Paste:

  • 1-2 green chillies
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 1-inch piece of cinnamon stick
  • 1/4 teaspoon fennel seeds

Preparation Method

Step 1 (Hyderabadi Egg Korma)

Prepare the Spice Paste:

  • Grind the green chillies, cloves, green cardamom pods, cinnamon stick, and fennel seeds into a smooth paste using a little water. Set aside.

Prepare the Cashew Paste:

  • Drain the soaked cashew nuts and blend them into a smooth paste with a little water. Set aside.

Cooking the Gravy:

  • Heat oil in a deep pan or kadai over medium heat. Add the finely sliced onions and saute until it turn golden brown colour.
  • Add ginger-garlic paste and sauté for another couple of minutes until the raw smell disappears.
  • Stir in the spice paste and cook for a minute or two until the oil starts to separate.
  • Add the chopped tomatoes and cook until they become soft and the oil starts separating from the mixture.
  • Reduce the heat to low and add the red chilli powder, turmeric powder, garam masala, cumin powder, coriander powder, and salt. Stir well and cook for a few minutes.

Step 2 (Hyderabadi Egg Korma)

Add Yogurt and Cashew Paste:

  • Reduce the heat to low and add yogurt. Mix it well with the spices and cook for a few minutes until it combines with the gravy.
  • Next, add the cashew paste and cook for another few minutes, stirring occasionally.

Add Coconut Milk and Water:

  • Pour in the coconut milk and stir well to combine.

Add the Eggs:

  • Carefully add the halved hard-boiled eggs to the gravy. Simmer for 5-7 minutes, allowing the eggs to soak up the flavors of the gravy.

Garnish and Serve:

  • Garnish the Hyderabadi Egg Korma with chopped coriander leaves.
