Cauliflower Dum Biryani is a delicious and aromatic Indian rice dish made with cauliflower florets and fragrant spices. It’s a vegetarian version of the popular biryani, known for its rich flavors and beautiful presentation. Here’s a simple recipe for making Cauliflower Dum Biryani:

INGREDIENTS:

For the Rice:

  • 1.5 cups basmati rice
  • 3 cups water
  • 1 bay leaf
  • 2-3 green cardamom pods
  • 2-3 cloves
  • Salt to taste

For the Cauliflower Marinade:

  • 1 small cauliflower, cut into florets
  • 1/2 cup yogurt
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt to taste
  • 2 tablespoons vegetable oil

For the Biryani Masala:

  • 2 tablespoons ghee or clarified butter
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped coriander leaves
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Red chilli powder – 1/2 teaspoon
  • Salt to taste

For Assembling:

  • Saffron strands soaked in warm milk (for garnish)
  • Ghee (clarified butter) for drizzling
  • Fried onions (optional)

Preparation Method

Today’s recipe is delicious and taste recipe that is Cauliflower Dum Biryani and so let’s gets started.

Step 1 (Cauliflower Dum Biryani)

  • Take 1.5 cups of basmati rice wash it well and Soak the rice in water for about 20 to 30 minutes. Drain and set aside.
  • In a large bowl, mix together the ingredients for the cauliflower marinade. Coat the cauliflower florets with this mixture and let them marinate for at least 30 minutes.
  • While the cauliflower is marinating, heat ghee in a large, heavy-bottomed pan or biryani pot. Add the sliced onions and saute till it reaches golden brown colour. And Remove a part of fried onions and keep it aside for garnishing.
  • To the remaining fried onions in the pot, add chopped tomatoes and cook until they become soft and the oil starts to separate.
  • Add the chopped mint and coriander leaves, along with the biryani masala spices – garam masala, cumin powder, coriander powder, and red chilli powder.
  • Add the marinated cauliflower florets and cook for about 5-7 minutes until they start to brown slightly.

Step 2 (Cauliflower Dum Biryani)

  • Take another pan and add 3 cups of water and boil it and add the soaked and drained rice and add bay leaf and then add cardamom pods and add cloves and the add salt. Cook the rice until it’s about 70% cooked. Drain and set aside.
  • Layer the partially cooked rice over the cauliflower and masala mixture in the biryani pot.
  • Drizzle saffron milk over the rice and top it with the reserved fried onions. You can also add a few teaspoons of ghee on top for added flavour.
  • Cover the pot with a tight-fitting lid or seal the edges with dough to create a dum effect. Cook on low heat for about 20-25 minutes, allowing the flavors to meld together and the rice to finish cooking.
  • Once done, gently fluff the biryani with a fork, mixing the cauliflower, rice, and masala.
  • Serve the Cauliflower Dum Biryani hot with raita or a side salad.
