It consists of soft lentil dumplings (bhallas) or fried lentil balls soaked in creamy yogurt (Dahi) and garnished with various spices and chutneys. It’s a delightful combination of textures and flavors, with the coolness of yogurt balancing the spiciness of the chutneys.

Here’s a basic recipe for making Dahi Bhalla:

INGREDIENTS:

For the Bhallas:

  • 1 cup urad dal (black gram lentils)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Oil for deep frying

For Assembling:

  • 2 cups thick yogurt (curd/Dahi)
  • Salt to taste
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp red chilli powder
  • Tamarind chutney or green chutney (optional)
  • Chopped fresh coriander leaves
  • Sev (crispy chickpea flour noodles, for garnish)

Preparation Method

Step 1 (Dahi Bhalla)

  • Soak the urad dal in water for about 4-5 hours or overnight. Drain the soaked dal and grind it into a smooth paste, adding a little water if needed.
  • Add a pinch of asafoetida and salt to the dal paste and mix well. Heat oil in a deep frying pan. Wet your hands and take a small portion of the dal paste. Then slightly flatten it gently and move it into hot oil.
  • Fry it until it turns crispy and golden brown in colour. Remove them from the oil and drain excess oil on paper towels.
  • Once the bhallas have cooled slightly, soak them in warm water for about 15-20 minutes to soften.
  • In the meantime, whisk the yogurt with a little salt until smooth and creamy. Keep it chilled.
  • Squeeze out the excess water from the soaked bhallas and arrange them on a serving plate.

Step 2 (Dahi Bhalla)

  • Pour the whipped yogurt over the bhallas, covering them completely. Sprinkle roasted cumin powder and red chilli powder on top of the yogurt.
  • Optionally, drizzle tamarind chutney and green chutney over the bhallas for added flavour. Then add chopped fresh coriander leaves for Garnish and Garnish with sev.
