INGREDIENTS:

For Boiling Potatoes:

  • 4 medium-sized potatoes
  • Water for boiling
  • A pinch of salt

For Dahi Aloo Curry:

  • 1 cup plain yogurt (dahi)
  • 2 tablespoons oil or ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds (methi)
  • 1/2 teaspoon asafoetida (hing)
  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • Green chilli – 1No, slit lengthwise
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • Red chilli powder – 1/2 teaspoon
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup water
  • Fresh coriander leaves, chopped for garnish

Step 1 (Dahi Aloo Recipe)

Boil the Potatoes:

  • Wash and peel the potatoes. Cut them into cubes or small pieces. Boil the potato pieces in salted water until they are fork-tender. Drain and set aside.

Prepare the Yogurt Mixture:

  • In a bowl, whisk the yogurt until it’s smooth. Add a pinch of salt, turmeric powder, and whisk again. Set this mixture aside.

Heat Oil:

  • Take a pan and add oil and heat it by keeping the flame on medium.

Temper the Oil:

  • Add cumin seeds, mustard seeds, fenugreek seeds, and asafoetida. Let them splutter.

Step 2 (Dahi Aloo Recipe)

Sauté Onions and Spices:

  • Then add the onion which is finely chopped and saute it until it turns golden brown colour. Add ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears. Add green chilies and continue to sauté.

Add Spice Powders:

  • Then add 1 teaspoon coriander powder and add 1/2 teaspoon of Red chilli powder and then add 1 teaspoon of garam masala and mix it well.

Combine Yogurt Mixture:

  • After keeping the flame on low and then add curd mixture to the pan. Stir continuously to avoid curdling and cook for a few minutes until the oil starts to separate from the yogurt.

Add Boiled Potatoes:

  • Add the boiled potato cubes to the yogurt mixture and mix well.

Step 3 (Dahi Aloo Recipe)

Add Water:

  • Pour in 1 cup of water and stir.

Simmer:

  • Simmer the curry for about 10-15 minutes on low heat, stirring occasionally. This helps the flavors to meld together.

Garnish:

  • Once the curry reaches your desired consistency, garnish with chopped fresh coriander leaves.

Serve:
