INGREDIENTS:

  • 1 cup sabudana (tapioca pearls)
  • 1/2 cup sugar
  • 2-3 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • Chopped nuts (like cashews and almonds), optional
  • Desiccated coconut or grated coconut for coating, optional

Preparation Method

Step 1 (Sabudana Ladoo)

  • Take bowl and add 1 cup Sabudana and wash it well and then soak it in drinking water for around 3 hours time or until become transparent and soft. Drain any excess water.
  • Take a pan and add ghee and heat it by keeping the flame on medium. Once the ghee melts, add the soaked and drained sabudana.
  • Roast them on low to medium heat for about 5-7 minutes until they become slightly crisp. Stir occasionally to prevent sticking.
  • Add the sugar to the roasted sabudana and continue to cook. The sugar will melt and combine with the sabudana. Stir well and cook for another 5-7 minutes until the mixture starts to leave the sides of the pan and becomes a bit dry.
  • Add cardamom powder and chopped nuts (if using), and mix well. Turn off the heat and let the mixture cool slightly, so it’s safe to handle.

Step 2 (Sabudana Ladoo)

  • When it’s still warm, but not too hot to touch, shape the mixture into small, round ladoos.
  • You can optionally roll the ladoos in desiccated coconut or grated coconut for an extra layer of flavour and texture.
