  • 2 cups carrots, peeled and finely chopped
  • 1/4 cup grated coconut
  • 1 tablespoon oil (preferably coconut oil)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (split black gram)
  • 1/2 teaspoon cumin seeds
  • 1-2 dry red chilies, broken into pieces
  • A pinch of asafoetida (hing)
  • A few curry leaves
  • Salt to taste
  • Freshly chopped coriander leaves for garnishing (optional)

Step 1 (Carrot Poriyal)

  • Take a pan and add oil and heat in medium flame. And add mustard seeds and let them splutter. Then add urad dal and cumin seeds.
  • Fry until it becomes golden brown colour. And add 1-2 dry red chillies, broken into pieces and then add a pinch of asafoetida (hing) and add A few curry leaves and saute for few minutes.
  • Add the finely chopped carrots and salt to the pan. Mix it well and cover the pan with a lid and cook the carrots on low to medium heat.
  • You can sprinkle a little water if needed to help cook the carrots without burning them. Stir occasionally to prevent sticking.
  • Cook until the carrots are tender but still retain their crunchiness. This usually takes about 8-10 minutes.

Step 2 (Carrot Poriyal)

  • Once the carrots are cooked, add the grated coconut to the pan. Mix well.
    Continue to cook for another 2-3 minutes, allowing the flavors to blend and the coconut to slightly roast.
  • Taste and adjust the seasoning if needed. Garnish with freshly chopped coriander leaves if desired.
  • Remove from heat and serve the Carrot Poriyal hot as a side dish with rice and any South Indian main course.
