INGREDIENTS:

For the Gujiya Dough:

  • 2 cups all-purpose flour (maida)
  • 4 tablespoons ghee (clarified butter)
  • Water, as needed

For the Filling:

  • 1 cup khoya (mawa)
  • 1/2 cup mixed dry fruits (chopped almonds, cashews, pistachios, raisins)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)

Other:

  • Ghee or oil for deep frying
  • A Gujiya mold or a fork for sealing

Preparation Method

Step 1 (Dry Fruits Gujiya)

Prepare the Dough:

In a mixing bowl, add the all-purpose flour and ghee.
Rub the ghee into the flour until it resembles bread crumbs.

Add water gradually as per your need and knead the dough till it reaches smooth and close it and keep it side for about 20 to 30 minutes.

Prepare the Filling:

In a non-stick pan, heat the khoya and sauté it on low heat until it turns light brown.
Add the chopped dry fruits, powdered sugar, cardamom powder, and saffron strands (if using) and mix it well and continue cooking for few minutes and turnoff the stove and Let it cool completely.


Assemble the Gujiyas:

Take a small portion of the dough and roll it into a small disc (like a poori).
Place the disc onto the Gujiya mold or use a fork to press the edges.


Place a spoonful of the filling in the center of the disc.
Fold the disc in half to cover the filling and seal the edges by pressing firmly. Make sure there are no openings.

Step 2 (Dry Fruits Gujiya)

Heat Oil/Ghee:

Take a pan and add ghee or oil and heat it by keeping the flame on medium. The temperature should be around 350°F (175°C).

Fry the Gujiyas:

Carefully place a few Gujiyas in the hot oil and fry them until they are golden brown and crispy. Make sure to fry them on medium heat, so they cook evenly. It should take about 5-6 minutes for each batch.

Remove and Drain:

Remove the Gujiyas with a slotted spoon and place them on a plate lined with paper towels to remove excess oil/ghee. Allow the Gujiyas to cool and then store them in an airtight container. They stay fresh for several days.
